Watermelon Ginger Rose Nectar Splash

Rose Splash


For the Ginger Syrup:

  • 5 oz ginger, in pieces
  • 18 oz water
  • 9 oz monk fruit
  • Pinch of salt
  • 1/4 tsp cardamom

For the Cocktail:

  • 35 oz seeded watermelon, in pieces
  • 5 oz lime juice
  • 21 oz sparkling water
  • 2 Tbsp of Rose Nectar
  • Ice cubes to serve
  • Fresh mint leaves to garnish


For the Ginger Syrup:
Place ginger into mixing bowl or food processor and chop 3 sec/speed 8. Scrape down sides of mixing bowl with spatula and chop a further 3 sec/speed 8.

Add water, monk fruit, cardamon and salt and without measuring cup cook 35 min/Varoma/speed or in a pot over low heat to simmer, covered.

Strain through a fine sieve and refrigerate until cold (approx. 1 hr.). Discard solids.

For the Cocktail:
Place watermelon into mixing bowl, insert measuring cup and blend 1 min/speed 10. Add lime juice, sparkling water, Rose Nectar and blend. 

Combine Cocktail ingredients with Ginger Syrup to taste. Serve over ice cubes and garnish with mint leaves. Enjoy! 🌹🌿♥️
