Watermelon Ginger Rose Nectar Splash

Ingredients:
For the Ginger Syrup:- 5 oz ginger, in pieces
- 18 oz water
- 9 oz monk fruit
- Pinch of salt
- 35 oz seeded watermelon, in pieces
- 5 oz lime juice
- 21 oz sparkling water
- 2 Tbsp of Rose Nectar
- Ice cubes to serve
- Fresh mint leaves to garnish
Directions:
For the Ginger Syrup: Place ginger into mixing bowl or food processor and chop 3 sec/speed 8. Scrape down sides of mixing bowl with spatula and chop a further 3 sec/speed 8. Add water, monk fruit and salt and without measuring cup cook 35 min/Varoma/speed or in a pot over low heat to simmer, covered. Strain through a fine sieve and refrigerate until cold (approx. 1 hour). Discard solids. For the Cocktail: Place watermelon into mixing bowl, insert measuring cup and blend 1 min/speed 10. Add lime juice, sparkling water, Rose Nectar and blend. Combine Cocktail ingredients with Ginger Syrup to taste. Serve over ice cubes and garnish with mint leaves. Enjoy! 🌹🌿
